Taco Tuesday (Or Wednesday, Thursday, Everyday)


Last night I was wanting something a little different than our typical taco salad night. So I whipped up a new & improved taco-inspired #lowcarbdinner: the Taco Skillet Bake! 🌶 🌮

It was easy. It was delish. And it will be a regular in our dinner rotation from now on

Low Carb Taco Skillet Bake


2lb ground beef

2 packets of taco seasoning

1 yellow onion diced

1 yellow bell pepper diced

1 red bell pepper diced

1 jalapeno diced

1 cup tomato sauce

1 can diced tomatoes & green chiles (I buy the Rotel brand)

1 packet cauliflower rice

1 pack shredded cheese (omit if dairy free)


Brown ground beef, add in taco seasoning, then set aside. Saute onion and bell peppers together with avocado oil. Add ground beef to onion and pepper mix. Add remaining ingredients and let simmer for 5 min. Sprinkle shredded cheese on top. Cover and let simmer until cheese is melted. Garnish with chives, jalapeños, avocado, sour cream and lime. Add hot sauce if you want an extra kick!
